Turkey Pesto Kievs

This is a good alternative to chicken and offers a really good lean protein source for recovery.
Prep Time 15 minutes – Cooking Time 30 minutes

Ingredients

  • 4 skinless boneless Turkey fillets
  • 50g Pesto
  • 2 tsp Clear honey
  • 1 tsp rapeseed oil
  • Roasted Mediterranean Veggies (see below)
  • Method

    Preheat your oven to 180°C
    Take each Turkey fillet and make a slit lengthways, leaving one side uncut. Spread a quester of the pesto inside each fillet.
    Mix together the honey and oil in a small bowl then brush each fillet with the mixture. Bake for 25-30 minutes until the turkey is cooked and the juices run clear when pierced. If the top starts to brown too quickly just cover with a bit of foil.
    Serve with roasted veg and enjoy !

    Roasted veggies

    2 aubergines, 2 courgettes, 2 peppers, 2 cloves of garlic, I tbsp of rapeseed oil. You can add some dried herbs of your preference. Mix them all about and cook on the same heat as the turkey for around 35 minutes.
